Taking Tooke To The World
Matooke, the cooking banana, has always been a mainstay of the diet of the people of Uganda as well as a source of employment for 75% of the country’s population.
To the local indigenous Baganda, Matooke is simply known as Emmere – literally meaning “the food” in English and it is grown off rich volcanic soils, at over 1000m above sea level in Western, Central and Eastern Uganda.
President Yoweri Kaguta Museveni commissioned the Presidential Initiative on Banana Industrial Development (PIBID) to kick-start the industrial commercialization of Uganda’s bananas through research and development. Today, Uganda’s matooke has been transformed from a subsistence crop to an exciting new line of food products for international markets under the Tooke brand.
Tooke products, which are based on patented technologies of Rev. Prof. Florence I. Muranga, are positioned to meet the demands of local, regional and international consumers. These products contain healthful elements like potassium, calcium, soluble fiber, vitamins and serotonin, and they are fat-free.
Raw Tooke flour
Raw Tooke flour is a dehydrated, milled product from the fresh, mature matooke and is the ultimate source for gluten-free baking, and a perfect thickener in smoothies, soups and sauces.
Instant Tooke flour
Instant Tooke flour is a dehydrated product made from cooked fresh, mature matooke. It forms the basis for a range of commercial Instant Tooke porridges, soups and meals.
Tooke flakes are produced through drum-drying matooke pulp. The flakes are the most convenient form for enjoying an instant meal with a taste that matches that of the traditional matooke meal.
Tooke generic products
These are processed from a blend of Raw Tooke wheat composite flours. They are virtually soluble in water and therefore have a very high energy level and have been positioned as premium products for infants and children. They can also be used to make milkshakes and to stabilize dairy products.
Extruded or expanded Tooke products
These are processed from raw Tooke flour. They are virtually soluble in water and therefore have a very high energy level and have been positioned as premium products for infants and children. They can also be used to make milkshakes and to stabilize dairy products.
Adding to the advantages of Tooke products, the processing is done by native banana growing communities, who are empowered through technical oversight of a multidisciplinary team of Uganda’s leading scientists, led by Rev. Prof. Florence I. Muranga. This qualifies Tooke products for the equal-opportunity market segment. In addition, the products are manufactured in a state-of-the-art facility and an environmentally friendly process in which the energy for drying matooke is derived from biowaste.
